These periodicals attempt to provide, in their respective fields, a more or less complete coverage of all books, articles, and reviews. L'Année Philologique is the oldest. As the name implies, its primary concern is literature, but it covers virtually every aspect of Classical antiquity, including archaeology. It averages around 16-20,000 citations per year. Each article has a brief synopsis of its main points in French, German, or English. It appears roughly 2 years after the year covered, i.e., the volume covering articles/books published in 1991 appeared this year. The Archäologische Bibliographie is concerned exclusively with archaeology. In addition to Classical archaeology, it covers the fields of Near Eastern, Egyptian, northern European, and scientific/theoretical archaeology, which receive little coverage in L'Année. It averages around 15,000 citations per year. There are no synopses, only citations. It is more current than L'Année, appearing only one year "late." UE has subscribed to both of these, but unfortunately the Bibliographie is now available only in a hideously expensive electronic form and we have not started a new subscription to this service. The Fasti Archaeologici is similar to Archäologische Bibliographie, but is more selective in its coverage, and provides synopses. It averages 10,000+ citations. It has fallen rather far behind--it's only up to 1989 or so. The Art Index and Humanities Index are general-purpose guides to selected periodicals. They cover articles only from a handful of English language periodicals. UE does subscribe to both of these. For Aegean Bronze Age groupies, there is also a monthly periodical called NESTOR. It contains citations of books, articles, and reviews. It is usually no more than a couple of months behind original publication. See http://classics.uc.edu/nestor/index.html
The standard reference is Paulys Realencyclopaedie der klassischen Altertumswissenschaft, revised G. Wissowa. It is usually referred to as "Pauly-Wissowa" or "RE" (for Realencyclopaedie). This is an encyclopedic work (roughly 50 1000-page volumes, plus supplements) covering all aspects of Greek and Roman antiquity, although it is especially strong on literature and history. If you need to know who someone was, require a complete listing of the sources for Hermogenes' career, etc., this is the place to go. Downer for the English-only: guess what language every word is in! Because the older volumes are now 70-80 years old, the bibliography is well out of date. UE does not have this. A new version is in preparation and will be available in an English edition. We hope to acquire this.
The best short English-language reference is probably the Oxford Classical Dictionary, which has short articles on major historical, literary, and cultural topics. (UE has)
For Greek History/Culture, the standard reference (in narrative, not encyclopedia, form) is the Cambridge Ancient History. Greek History is spread across 4-5 large volumes. (UE has)
For brief, encyclopedia-style articles about specific sites and their buildings, take a peek at the Princeton Encyclopedia of Classical Sites. The entries are uneven in format and quality, but are generally adequate for the basics, and some bibliography is provided. (UE has)
There are various encyclopedias (e.g., the Encyclopedia of World Art) that contain detailed entries on Greek Architecture. UE has several of these.

This is, fortunately enough, a field where English-speakers have excelled in producing general/synthetic works, although there are some very useful foreign-language references. What follows is an extremely select and wholly unscientifically selected list of sources to get you started. "Series" indicates that the buildings from a site appear in a number of volumes, and gives just the name of the general series. There can, as in the case of Delos or Delphi, be as many as 25-30 volumes, with more in preparation.

Wycherley, The Athenian Agora, XIV: The Agora of Athens, The History, Shape and Uses of an Ancient City Center (Princeton, 1972) is a synthesis; less detailed, but including more recent finds is J. Athens (Kerameikos Area): German Archaeological Institute. Series: Kerameikos.
Athens (everywhere else): mostly Greek. Brief reports in the Praktika or Deltion; "final" publications are virtually non-existent. Nice summaries of the whole city may be found in R.E. Wycherley, The Stones of Athens and J. Camp, The Archaeology of Athens (New Haven, 2001); see also J. Travlos, Pictorial Dictionary of Ancient Athens (London & New York, 1971). J.S. Boersma, Athenian Building Policy from 561-404 (Groningen, 1970) is also highly useful.
Attica: For Sounion, Rhamnous, and the Hephaisteion: important is H. Plommer, "Three Attic Temples," ABSA 45(1950) pp. 66-112.
Bassae: Various schools. The new series The Temple of Apollo Bassitas [ed. F.C. Cooper] supersedes all previous work.
